COOKING ROCKFISH

Rockfish can be steamed, baked, bar-b-qued, or fried as a main course or
made into a sandwich. To steam, put fillets in a frying pan with water to
cover halfway up the fillet. Add a squeeze of lemon and cook at a high heat
until the fish is flaky. Be careful not to overcook or let the liquid boil away.
Experiment with different seasonings such as blackened rockfish on the
bar-b-que!
